First and foremost, Happy Mother’s Day to all!
Whether this Sunday is your very first Mother’s Day or yet another one… let us not forget, the world would stop without you all.
So, if for some crazy reason you haven’t heard it yet, thank you.
Now… what do we get Mom this year?
Flowers, you say?
Some may think this is a typical or generic gift, but there is some sort of classy, impression flowers continue to make… How about a little spin off of this reoccurring flower idea?
This year, MAKE HER FLOWERS. Well, sort of.
We’ve got a brand new recipe for a special, Mother’s Day treat – LAVENDER CARAMEL ICE CREAM DROPS.
Let’s get started.
WHAT YOU NEED:
- 10 g freshly picked lavender
- 20 g sugar
- 1 pinch salt
- 20 g maple syrup
- 20 g VPI-124-CC Crunchy Caramel Chip
- 300 ml whipping cream
- 200 ml milk
- 3 egg yolks
PREPARATION:

Wash lavender carefully in cold water. Dab dry with paper towel, remove stalk (approx. 8 grams of flowers).

Finely chop flowers. Mix the lavender with sugar, maple syrup and a pinch of salt.

Cover & allow to rest for at least an hour (preferably leave refrigerated overnight).

Mix egg yolks & flowers, beat until mixture is fluffy. Heat the cream and milk. Add the lavender-egg mixture.

Carefully stir the rest so the egg does not coagulate.

Pour into pan & boil.

Pour back into a bowl, whisk for 1 minute to keep egg from coagulating.

Final touch: Sprinkle VPI-124-CC Crunchy Caramel to your liking. Allow to cool down and freeze. Maybe even drizzle some of our VPI-FBDK Salted Caramel Paste before serving it to the “Queens of the Day”.
